Well, it is Monday and so the gluten free diet begins! I know some of you may want to kick me for saying this (but hey, it's not my fault I've been given skinny genes!), but it's really weird for me because I've never had to restrict what I've eaten before. So that whole bag of sour skittles looks good? Ok, lets eat it all! Well, not so much anymore, at least for the next two weeks of my experiment (it was only one week, but then I found out it really takes two weeks to see results). I went to Wild Oats last night and bought gluten free and lactose free items to begin changing my diet. I felt like a little sickly child buying all of this "special food" and almost wanted to cry that picking out food had to be this hard and that you had to consult a list (4 pages long) just to make sure it didn't have any of these harmful ingredients in it. After getting home from this overwhelming experience, I baked some gluten free chocolate chip cookies and gluten free banana bread. The cookies were pretty good, a bit bland, but it does satisfy the sweet craving, and I haven't tried the bread yet. I made chicken with a gluten free mix of coating, which was pretty yummy, and a rice that was also, yep you guessed it-gluten free! However, I did mess up a bit by adding soy sauce that has WHEAT as one of the ingredients...gee. So today at the store I will pick up some without...boo.
This morning I woke up to a gluten free breakfast...Envirokids peanut butter puffs, which weren't too shabby, topped off with soy milk (a bit odd, but I've never been a milk fan, so it wasn't that weird), and finished up with a granola bar. 
Now, breakfast wasn't so terrible and I think I could handle that...but I'm just dreading the fact that lunch is only hours away where I will have to try gluten free bread...made with white rice! It feels like a ton of bricks and doesn't look too happening either. I've heard that the bread is the worst part, some people just eliminate it out of their diets completely. So, I will report how it tastes paired with the soy cheese and whew, regular deli meat. Tonight for dinner, I'm hand-making a gluten free pizza. Howard will be a good sport in trying this, however I can sense his fear, haha. Oh well, here's to gluten-free eating, Day 1!

Good luck with the diet Sarah. I'm proud of you for wanting to try it out to see if it does help you. I'll keep you in my prayers!
